Making cooking easy, nutritious and fun is what we are about. We have developed “Soup Maps” which demystify the cooking process and encourages people to work with whatever ingredients are at hand.
Once you understand the basic method, cooking any soup becomes easy and pleasurable. You will feel free to explore multiple recipe ideas using any ingredients you fancy.
Here is a Soup Map Of The Americas that we use in our workshops. The process is easy to understand and learn. It’s not about recipes, it’s about ingredients first!
Fry your base ingredients ( onions, garlic, celery, peppers etc).
Add aromatics ( herbs, spices, chillies, sugars etc).
Add vegetables, grains and stock. (tomatoes, potatoes squash, okra, stock, etc).
Add protein rich beans ( black, red, pigeon, chickpeas etc).
Add green veg near the end ( spinach, callaloo, peas etc).
Add seasoning and herbs and enjoy!
